A super-fresh creation by mixologist John McCarthy at West Village bar and restaurant, Whitehall, the No. 9 is the perfect way to pretend we’re already in Summer Fridays mode. Plus we live for anything with rose bitters. We had to find out how to make it at home, should we be unable to get to Whitehall for whatever reason.
1.5oz Nolet’s Silver Dry Gin
0.5oz honey syrup
1oz peach nectar
2 dashes Applejack rose bitters
Mix the gin, honey syrup, peach nectar and rose bitters. Shake. Strain over ice and add a splash of club soda. Garnish with a peach slice and a raspberry.
